Dark Roast is the term for coffee that has been darkened to roast and thus gives a more bitter and less acidic taste than coffee beans, which have been roasted in less time. When the coffee beans are roasted, the oil accumulates in small pockets through the heart of the bean. The longer the beans are roasted, the more moisture will leave the beans, and the coffee oils develop even more and appear more strongly on the surface of the coffee beans, giving these dark roasted coffees their distinctive oiled appearance. The longer roasting causes the bean to start to burn. This adds to the bittersweet taste that the lovers of the dark roasted coffees so much appreciate. Dark roasted coffee contains significantly less acid and caffeine than the lighter roasted coffees, as these are burnt off during the roasting process.
